Meatball Soup

Easy beef meatball soup recipe. Budget-friendly dinner recipe for cold autumn and winter nights.

I have a problem with soups. I love them- they’re easy to make, they’re healthy, they’re generally cheap, you can make large batches and not cook for another day or two… but I don’t find them filling. I hate eating a bunch of bread with something that is meant to be the ‘light’ option. Now this soup… is a different story. Filling, warm and easy to make.

  • Half an onion/ 1 small onion
  • 1 stick of celery
  • ⅓ root celery
  • 1 -2 carrots
  • Parsley
  • Beef bouillon cube
  • Pepper
  • Salt
  • (Optional) noodles
  • 500g ground beef
  • Egg
  • 2 tbs breadcrumbs
  • 2 tbs milk
  • 1 egg
  • Salt
  • Pepper
  1. Heat oil in a large pot.
  2. Roughly chop up carrots, onion, celery and root celery. Quickly fry them and add water, beef stock or bouillon cube, salt and pepper. Cover and bring to a boil. Let simmer while you prepare the meatballs.
  3. Mix all ingredients for meatballs until well-combined. Roll out the meatballs, about 2.5 cm/ an inch in diameter.
  4. Gently drop the meatballs into the boiling water.
  5. Let cook for a few minutes, until the meatballs are no longer pink in the centre.
  6. Add pasta of your choice (we like rice noodles or angel-hair).
  7. Garnish with fresh parsley and enjoy!
